Homemade Egg Bites Recipe

Happy Friday friends! I am still dissecting and plan on sharing my 2019 Reader Survey Results, but until then...I did notice that recipes were a thing of the past on the blog that have been missed.
To be honest, my husband does the majority of the cooking in our house. He's great at it, is far more patient than I am and I stick to baking ;) BUT I do like to experiment here and there and am trying to be better about eating breakfast and doing some healthier snacking.

I made these homemade egg bites over the weekend, they were so quick and easy and I've been enjoying them for breakfast instead of not eating at all or eating a breakfast sandwich at work. 
I love that you can change them up...most of these recipes call for egg yolk and I'm an egg white only kinda lady, so I did just that. You can add a variety of vegetables, just keep in mind the more you add the soggier they can become. Also, you can make these in mini or regular size- I opted for the mini's this first try.

You will need:
nonstick cooking spray
12 eggs- use whole egg or just egg whites
Himalayan salt
freshly ground black pepper
4 slices turkey bacon, chopped
3/4 cup spinach, chopped
2 tomatoes, chopped

To make:
Preheat oven to 350 degrees
Spray cupcake tray with nonstick cooking spray
Crack eggs into a large mixing bowl
Add desired amount of salt and pepper to the eggs and beat the eggs
Divide tomatoes evenly into each cup of the tray
Pour egg mixture on top of tomatoes in each cup
Divide turkey bacon evenly and place on top of eggs
Lastly, divide the spinach evenly and place on top of eggs
Bake for 20-25 minutes



*note- you can add whatever type of veggies you would like- think butternut squash, Canadian bacon, onions, peppers, jalapenos, mushrooms, etc...you can even make different ingredients in different cups so that you're not eating the same exact thing every morning, play with a variety!
*refrigerate and re-heat throughout the week for 1 minute before enjoying
