Chocolate Chip Banana Baked Oatmeal Cups

I've been trying to actually make more of what I save on Pinterest rather than it just taking up space on the Internet.
I am really awful about eating breakfast unless it's Sunday and Charlie is cooking for me ;) In an effort to be better about my eating habits and prepared I made these and they are so delicious. The recipe was adapted from Skinny Taste.

You need:
3 cups rolled oats or old-fashioned oats
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/4 cup maple syrup
1 cup mashed banana- about 2 bananas
2 teaspoons vanilla extract
1 cup 1% milk
1/4 cup melted coconut oil
1 cup mini chocolate chips
cooking spray

To make:
Preheat oven to 350 degrees
In a medium bowl combine the oats, cinnamon, nutmeg, baking powder and salt. Set aside
Put 2 eggs in to a separate bowl and whisk together with the maple syrup, mashed bananas and vanilla until combined and smooth
Slowly add in the milk and coconut oil by whisking
Pour the wet ingredients in to the dry ingredients. Stir until oats are covered and moist
Slowly stir in the chocolate chips
Spray a muffin pan with cooking spray and spoon in the mixture among the 12 muffin tins
Press the mixture down with the spoon so all the oats are covered in liquid
Bake for 25-30 minutes or until tops are slightly brown
Let cool for 5 minutes

To make ahead:
Bake and let completely cool
Wrap each one individually in plastic wrap and place in a freezer bag to freeze
Warm up in microwave by removing wrap and heat for 2 minutes
To keep from drying out- place a cup of water sitting inside the microwave while warming
