Chocolate Chip Zucchini Muffins

Zucchini is one of my favorite vegetables. I love that it can be enjoyed so many ways. What I didn't think of until I saw it being used in bread, was how I can incorporate it into my baking. While it may sound a little weird, I promise it is so good.

zucchini muffins

You will need:
2 eggs
1/2 cup vegetable oil
1/2 cup sugar
1/2 cup brown sugar
2 tsp. vanilla
1 1/2 cups grated (2 large zucchini)
1 1/2 cups flour
1/2 cup cocoa
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 bag of mini chocolate chips

To make:
Combine eggs, oil, sugars, and vanilla in a bowl and mix well
Grate zucchini on a cheese grater in a separate bowl
Slowly add in zucchini to first bowl of ingredients and stir
Combine dry ingredients in a small bowl
Slowly add dry ingredients to wet ingredients
Add in chocolate chips and mix until everything is combined well
Spoon in to muffin pans, I added cupcake liners to make it easy
Bake at 350 degrees for 25 minutes

I think the most shocking part about the muffins is that you can't even taste zucchini in them. I do believe that's the main contributor to the moistness. I was able to pop some in the freezer too, and they thaw out nicely and can be enjoyed for breakfast or a mid-day snack.

That's what I love about cooking and baking...the rarest of ingredients make the tastiest things. Have you ever tried something like this? Any other zucchini recipes you want to share with me?
