I remember the first time I tried sweet potato casserole and loved the combination of flavors. I now make my own every year on Thanksgiving and have yet to try a sweet potato on it's own...until now. I don't know what I was waiting for because I can't stop. This new recipe was devoured two days in a row because I loved it so much and I hope you will too.
You will need:
2 large sweet potatoes, peeled and cut in to wedges
2 1/2 tablespoons olive oil
1 tablespoon Italian seasoning
1 1/2 teaspoons salt
1 teaspon sugar
1/2 teaspoon onion powder
1/2 teaspoon black pepper
Preheat oven to 450 degrees
Line baking sheet with aluminum foil
Peel and cut your sweet potatoes, after cutting off the pointy edges
Mix all ingredients together well in a large bowl
Add in potato wedges and mix again making sure all are covered well with oil and spices
Put sweet potato wedges on baking sheet in one single layer and bake for 30 minutes
Turn your broiler to low and cook for an additional 3 minutes to make crispy and browned
Watch closely in case they cook faster
Cool on pan for 5 minutes
Serve and enjoy!
I was seriously amazed at how easy and delicious these are. I popped them in the oven while I prepped and cooked the rest of dinner and voila...a house that smelled amazing and a good meal afterwards.
