I love salads this time of the year, especially with some delicious grilled chicken and fresh veggies. Experimenting in the kitchen has become a hobby of mine and I wanted to try out something new because I can get bored with chicken pretty quick, so I whipped up a new marinade to try.
Prep Time: 40 minutes for marinade
Cook Time: 20 minutes
Makes: 4 servings
1 cup brown sugar
1 cup olive oil
1/2 cup soy sauce
1/2 cup vinegar
1/2 tbsp. onion powder
1/2 tbsp. garlic powder
8 boneless skinless chicken tenderloins
Desired salad ingredients-- Shown here are spinach, assorted peppers, olives, tomatoes and cucumbers.
Prepare marinade by mixing brown sugar, olive oil, vinegar, garlic and onion powders in a large bowl.
Dip in chicken tenderloins and mix.
Cover bowl and refrigerate for 30 minutes, or if you like a bolder flavor you can leave it in overnight.
While the chicken is marinating, prepare your salad.
Chop vegetables and toss with spinach or lettuce.
Remove chicken from marinade and grill until cooked thoroughly.
My best tips for grilling chicken are to cook on each side for 5 minutes without touching them. Chicken should be at 165 degrees Fahrenheit when done.
Let chicken stand for 10 minutes and then shred or leave whole, depending on your preference.
Top salad with marinated chicken and serve.
