Brown Sugar Cupcakes

If you know me at all you know I looooove cupcakes. I started a petition for a cupcake emoji, and whoever is elected for President this year better make it happen. Just kidding, but all jokes aside- I will never ever turn down a cupcake. I was itching for something new so I tried an idea out and here we are.

You know something else people love besides cupcakes? Brown sugar. I don't blame them, cause I'm one of them. It's straight delicious--so why not make a cupcake out of it? It gets even better when it's involved in the icing too. Let's get to it.

You will need:

1 1/2 cups all- purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup loosely packed brown sugar
1 large egg
3/4 cup milk
1/2 cup unsalted butter, melted and cooled
1 tablespoon vanilla extract
2 mixing bowls, whisk & spoon

For the frosting:

6 oz. cold cream cheese
1/2 cup creamy peanut butter
1 cup loosely packed brown sugar
1 cup powdered sugar
2 teaspoons vanilla extract

To make:

Preheat oven to 350 degrees
In one bowl mix flour, baking soda & salt and set aside
In other bowl, whisk brown sugar and egg until smooth
Next, add in vanilla extract and milk and continue mixing
Pour in melted butter and mix with whisk
Lastly, add in the first bowl of the flour, soda and salt and mix with large spoon until the batter is smooth
Put in oven and bake for 16-19 minutes until tops are golden
Let cool completely before icing and decorating

For the frosting:

Add cream cheese to a bowl and begin beating with an electric mixer until smooth
Add peanut butter and vanilla extract & mix until combined
With the mixer on low speed, add in the brown & powdered sugars gradually
Once all the ingredients are added, turn to medium-high speed and mix for 5 minutes scraping the sides of the bowl to get everything combined and creamy

These are a perfect every day cupcake that can be enjoyed any season, or any day ending in Y. I told you I love cupcakes.
