Italian Ricotta Cheese Christmas Cookies

When I was young I have vivid memories of coming home from school during the holidays and my mom being in the kitchen baking. Always baking goodies for her friends, neighbors, the family, and anyone who would eat them.  I couldn't wait to make my mom's recipe when I heard that Lindsay & Brittany were hosting a cookie exchange. Today I'm sharing my mom's Italian Christmas Cookie recipe...a favorite of mine.




I loved walking in the door and smelling the cookies and holiday goodness coming from the kitchen. It made our home seem so cozy and warm. I swear with each bite I am taken back to my childhood and that alone makes each minute baking worth it.

You will need:

2 cups sugar
1 cup butter, softened
1 15 oz. container ricotta cheese
2 teaspoons vanilla extract
2 large eggs
4 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cup powdered sugar
3 tablespoons milk


To make:

Preheat oven to 350 degrees
In a large bowl, use a mixer at low speed and beat sugar and butter until blended
Increase mixer speed to high and beat until light and fluffy- about 5 minutes
Add in your ricotta, vanilla and eggs & beat at a medium speed until well mixed
Reduce mixer speed to low & add flour, baking powder & salt
Beat until dough forms
Scoop by tablespoons about 2 inches apart on an ungreased cookie sheet
Bake about 15 minutes until cookies are a light golden color









Once your cookies are cool you can prepare the icing-
In a small bowl stir the powdered sugar and milk until smooth
With a spatula or knife, spread your icing on the cookies
Allow icing to dry completely for about 1 hour
Sprinkle or decorate with your version of holiday fun

Pour a big glass of milk & taste a few to enjoy!

Can you believe that these are my mom's Christmas dishes...from FOREVER ago? My grandmother gave them to me several years ago and just 2 years ago I finally had the strength and mentality to take them out of their boxes. I was afraid of missing my mom too much, but these dishes bring me so many beautiful memories. To have her cookies sitting on her plates really made me so happy. Christmas isn't about the presents, it's about moments like these.
