Portobello Mushroom Pizzas

Pizza, my lover. I could eat it pretty much every night, but that's not acceptable. I tried a healthier version of my favorite breakfast, lunch and dinner with some lighter ingredients and it turned out amazing.

You will need:
1 large portobello mushroom, stem and gills removed
1 tablespoon olive oil
1/2 cup spinach leaves
1/4 cup diced tomatoes
1/4 cup mozarella cheese
any other pizza toppings you would like- I think some olives, peppers, or crumbled turkey bacon would be good on them

Directions:
Preheat oven to 375 degrees
Remove stem and gills from mushroom
Place mushroom on pizza sheet and bake for 5 minutes
Remove from the oven, drizzle olive oil and then layer ingredients
Put spinach, tomatoes, then cheese
Bake for additional 20 minutes or until cheese is melted

The pizzas turned out really tasty and were so simple to make. I think I'll add olives and maybe some diced peppers next time. I'm excited to try out new options and make some more healthy pizzas.
