Philly Cheesesteak Stuffed Peppers

One of my favorite recipes is these Philly Cheesesteak Stuffed Peppers. The main reason I love them is I feel like eating something called cheesesteak with the word pepper involved is justifiable in a normal diet. They are SO good and make a great easy dinner with not too many ingredients.

I discovered the recipe on Peace, Love, and Low Carb and tweaked it to my liking over the course of making the dish and experimenting.

You will need:
1 lb. of thinly sliced roast beef
6 slices provolone cheese
3 large green bell peppers
1 sliced sweet onion
1 tbs. butter
2 tbs. olive oil
1. 5 tbs. minced garlic

*The recipe also calls for 6oz baby bella mushrooms-sliced which I do not add because my husband won't eat them

To make:
Slice peppers in half lengthwise and remove the "insides"
Preheat oven to 400 degrees
In a pan over medium heat cook butter, olive oil, garlic and onions (and mushrooms) about 10-12 minutes
Slice roast beef in to thin strips and add to the mixture and cook an additional 10 minutes
Line the inside of each pepper with a half slice of provolone cheese
Fill peppers with mixture--mine are usually overflowing
Top each pepper with another half slice of provolone cheese
Bake for 15-20 minutes until the cheese on top is golden brown

You will find these on our dinner table usually once a month because I love them so much. The combined smell of the peppers, garlic and roast beef are really amazing together and they are also still tasty as ever reheated the next day.
