It's been a while since I've tried out a new recipe, but I really would love to do this at least twice a month. Let's just say this is 1 of my 2 for February and January was a free pass.
Ok, great. Moving on.
Chili. It's a winter staple. I could eat it almost every day. Amazing stuff, right? Right.
Well, when I found a remix that looked right up my alley I couldn't wait to try it.
Ingredients:
2 chicken breasts, cooked and shredded
1 cup cooked brown rice
1/2 bottle mild wing sauce
2 cups chicken broth
1 can Rotel
2 packets dry ranch
1 small carton of heavy whipping cream
1 can white beans (I'm not a huge fan, so I didn't use these)
Combine cooked chicken with wing sauce and one packet of ranch in a pan, mix and cook on low.
Add the beans, Rotel, rice and chicken broth.
Bring to a boil
Once at a boil, reduce heat and simmer.
Add second packet of ranch.
Stir in whipping cream and bring it to a boil.
Remove from heat.
