Quick & Easy Eats

Hi Everyone! Today I wanted to share a quick, cheap and easy recipe that I have recently been loving for lunch. Sometimes....well most times I get sick of leftovers from the night before at lunch time. I recently saw a few things on Pinterest that inspired me to try something of my own.
In no way is this some fancy professional recipe, but it is tasty, simple to make and pretty inexpensive.

You will need:
Ground Turkey
Tomatoes
Mushrooms
Olive Oil
Onion Powder
McCormick Garlic Pepper
Minced Garlic


I start by warming up a little bit of olive oil in two separate pans and adding some spices (garlic pepper and onion powder) as mentioned above. I put less spices in the pan that I will add the vegetables to.
In one pan I add the ground turkey and cook until brown. 
While cooking the ground turkey I clean the tomatoes (I use porterhouse) and mushrooms (I use baby bella) with Fit Fruit & Vegetable Wash. 
I then cut the tomatoes into small pieces; the mushrooms are already small enough that I don't chop them.
While leaving the turkey to cook on a low heat I add the mushrooms and tomatoes to the other pan. I throw in dash of minced garlic and cook for about 2- 2 1/2 minutes on medium heat. 


I combine a portion of the ground turkey and the mushroom/tomato mix in a bowl and viola! Lunch is served! 
You could probably add a variety of vegetables. I tried adding some leftover red peppers that I had chopped up and wasn't a fan. Zucchini or green peppers may be yummy to try though.



I purchased the tomatoes, turkey, minced garlic and mushrooms at Target for under $7. The Fit, olive oil and spices I had in my pantry since they are some of my every-day cooking items. This batch will last about 3-4 days for one person depending on portion size. The whole preparation and cook time takes less than 10 minutes, which is perfect if you like to meal prep for the week to save time or need to whip up something quick.

  1. Emelia, this dish looks delicious! Isn't pinterest the best? I find so many of my recipes there, and get so excited when they turn out to be a success.

    I'm not a huge fan of mushrooms just because of the texture, but could easily leave those out. I'd love to try this recipe out, and SUPER LOVE that it is a quick & easy. Easy is always my favorite. ;)
